  • 6 cups vegetable broth

  • 3 large Russet potatoes, peeled and diced

  • 2 cups frozen corn

  • 1 (14.5 ounce) can diced tomatoes, undrained

  • 1 cup uncooked elbow macaroni

  • 1/4 cup chopped fresh parsley
