Step 1:

If Using Fresh Crawfish, Remove the Tails from The Bodies. if Using Frozen Crawfish, Thaw the Meat in A Bowl of Cold Water

Step 2:

In a Large Pot or Dutch Oven, Heat the Oil Over Medium Heat

Step 3:

Add the Flour and Stir until It Forms a Dark Brown Roux

Step 4:

Add the Chopped Vegetables and Cook until They Are Soft

Step 5:

Stir in The Tomato Paste and Chicken Broth

Step 6:

Season with Salt, Cayenne Pepper, and Black Pepper

Step 7:

Add the Crawfish Tails and Simmer for 15 Minutes
